Veggeroni (Seitan Pepperoni) | recipe from FatFree Vegan Kitchen
Veggeroni (Seitan Pepperoni)
(with thanks to Joanne Stepaniak, Lachesis, and all the other inventive cooks who’ve been wrapping their seitan in foil and baking it)
Dry ingredients:
1 1/4 cup vital wheat gluten
1/4 cup nutritional yeast
3/4 teaspoon salt
2-3 teaspoons Spanish smoked paprika
1 teaspoon freshly ground black pepper
1/2 teaspoon red pepper flakes (use more for spicier pepperoni)
3/4 teaspoons mustard seeds
1 teaspoon fennel seeds
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
Wet ingredients:
2 tablespoons cashew butter (may substitute peanut butter or tahini)
2/3 cup water
4 tablespoons ketchup or tomato sauce
1 teaspoon Liquid Smoke
1/4 teaspoon agave nectar (optional, but definitely use if you use tomato sauce)
Preheat oven to 325 F. Mix dry ingredients in a large bowl. Put the cashew butter in a smaller bowl, and slowly mix in the water. Add the remaining wet ingredients to the small bowl and blend well.
Pour the wet mixture into the dry, stirring well (use your hands if necessary). Remove from the bowl and knead for a few minutes, making sure ingredients are distributed well.
Roll into a log shape, about 7 inches long. Place the log on foil and roll it up in the foil, twisting the ends to seal. Bake for 1 hour and 15 minutes, turning over after 45 minutes.
Remove from oven and unwrap to cool. Slice as needed and store leftovers wrapped in plastic wrap in the fridge.
Notes:
This fit perfectly in my toaster oven, so I didn’t have to heat up the whole kitchen.
I sliced it and used it as-is on pizza, pita pizza, wraps, and sandwiches, but you may want to slice it and pan-fry it to give it more of a real pepperoni feel.
Makes 6-8 servings. Based on 8 servings: 202 Calories (kcal); 5g Total Fat; (21% calories from fat); 33g Protein; 8g Carbohydrate; 0g Cholesterol; 347mg Sodium; 2g Fiber.

Gran Centenario Tequila Reposado

"Gran Centenario Reposado, NOM 1122. In my opinion this is a truly fine tequila with a light amber color & nice, long, symmetrical legs extending to the top of the glass. The first nose is that of light agave followed by slight oak & caramel. The sweet, peppery initial taste is openly inviting with a nice aged quality. Vanilla & more peppery spice forms a deep, consistent body. This entire experience finishes with an enveloping veil of agave nectar, tingling sensation, & tapers off beautifully. A slight numbing warms the entire palate & adds to the overall smoothness. This is my favorite reposado to date. It mixes superbly in a Margarita or with grapefruit soda. Very enjoyable strait, on the rocks, etc. Top shelf. A+"

"I was pretty impressed with this. This is one of the more complex tequila's I know of, and I think the better nose and palate someone has the more they would appreciate and enjoy this. I don't claim to be an expert by any means, but I definitely could identify lots of different notes all throughout.
The nose was very fruity, strong hints of lemon and other citrus fruits, along with a very nice presence of smoke, oak, and almost a pepper/spiciness. Entry was sweet, mostly with fruit and agave flavors, again the citrus notes being pretty evident. In the body all of the elements in the aroma come to life and you really can taste each of those flavors, along with a smokey oak flavor, but not overly stated, and a hint of buttery caramel. The finish was nice as some other flavors and some of the sweeter agave and other notes came back. I kind of liked how I experienced a sweet flavor/smell and entry, then a rich full-bodied smokey buttery flavor, and then the sweetness again at the end. Very nice.
Very smooth for a rep, but I'm an anejo lover so that was the one piece that might have been a touch better for me. But excellent for a rep.
This reminded me of El Tesoro's anejo quite a bit. It was almost like a more flavor-packed version of it actually. I am a big fan of ET, so that was a great thing for me. For the $45-ish I paid for the bottle it was well worth it and I highly recommend giving it a try if you have the chance."

"I purchased a bottle of this from Wineandliquordepot.com. Let me just say that I was blown away at the quality, not to mention the price relative to high quality tequilas in the industry. This tequila had so much character. As I sipped it there was nothing that I didn't like about it. It was so good that I tasted it side-by-side to Don Julio 1942, and Don Julio (my two favorite anejos). It had strong aromas of vanilla and fruit. It was very sweet, syrupy with no detectable bitterness. The Don Julio anejos are slightly sweeter, and fruitier (citrus) with NO bitterness. This tequila has a much more earthy taste which I appreciated. There were also hints of smoke. This is my new go-to tequila. I am blown away at the quality and have a will have a hard time enjoying the more affordable tequilas that I have been searching for in these economic times. Top-notch all the way, very high in character."

Let me say this: the bottle will try to scare you away, but if you're brave you will be rewarded! For $20-25, you can't expect a tequila this good to be cased in crystal.
Aroma: Thick caramel, vanilla, and butterscotch. Inviting, to say the least.
Initial Taste: Clean and warm with a delicious oak that brings hints of sweet bourbon. Coats the mouth and crisps on the tip of the tongue.
Body: Rich in smokey agave, pepper, and sweet oak.
Finish: Medium-to-long duration with little to no heat or bitterness. Presence of oils and oak remain the longest, with agave fading shortly before.
For a lover of both tequila and whiskey, this reposado is outstanding. Forget it's price: this is a reposado that can stand alone in any price category. Truly a great sipper and a wonderful mixer in fine cocktails that highlight tequila (the tequila old fashioned being one of my favorites with this particular reposado).
It is currently listed as one of my favorite reposados, along with Chinaco, 1921, Gran Centenario, and Corralejo."

Best-Ever Hot Cocoa MixMakes about 20 servings
3 cups nonfat dry milk
2 cups confectioners' sugar
1 1/2 cups Dutch-processed cocoa powder
1 1/2 cups white chocolate chips
1/4 teaspoon Salt
Combine ingredients in large bowl. Working in two batches, pulse ingredients in food processor until chocolate is finely ground. Store in airtight container for up to 3 months. To make hot cocoa, stir 1/3 cup of this mix into 1 cup of hot milk. Top with whipped cream or mini marshmallows.
Forget about the watery hot cocoa with dehydrated marshmallows you sipped as a kid. Our “instant” hot cocoa recipe is creamy, rich, and big on chocolate flavor.
Test Kitchen Discoveries
* Nonfat dry milk adds a sweet dairy flavor to the cocoa, especially if you reconstitute the mix with hot milk instead of hot water.
* Confectioners’ sugar works best in this recipe. It dissolves quickly and the cornstarch (an ingredient manufacturers add to the sugar to prevent clumping) helps thicken the cocoa.
* White chocolate provided our cocoa with a soft, creamy texture and pushes the chocolate flavor to new heights.

Four Loko Recycled Into Ethanol
RICHMOND, Va. — Truckloads of Four Loko and other alcohol-laced energy drinks are being recycled into ethanol and other products after federal authorities told manufacturers the beverages were dangerous and caused users to become "wide-awake drunk."
Wholesalers from Virginia, North Carolina, Maryland and other East Coast states started sending cases of the high-alcohol, caffeinated malt beverages to MXI Environmental Services in Virginia after the U.S. Food and Drug Administration announced a crackdown on the sale of such beverages in November.
Brian Potter, vice president of operations at MXI's facility in Abingdon, Va., said about a couple of hundred truckloads of the drinks would be coming to the plant. Each truck holds 2,000 cases of the 23.5-ounce cans.
MXI Enterprises is one of three facilities in the U.S. that recycle ethanol, according to the American Coalition for Ethanol, an industry group. Potter said Thursday that his competitors also are taking shipments of the drinks.
"We're equipped to process four truckloads a day, and we're at full capacity," he said. "There are about 30 different products involved, and we've only seen a couple of them at this point. It could go on for several months."
The FDA issued warning letters to four companies on Nov. 17 saying the beverages' combination of caffeine and alcohol can lead to a "wide-awake drunk." The agency called the caffeine an "unsafe food additive." Warning letters were sent to Phusion Projects, Charge Beverages Corp., New Century Brewing Co. and United Brands Company Inc.
FDA Commissioner Margaret Hamburg said at the time that consuming the drinks has led to alcohol poisoning, car accidents and assaults.
Health experts have raised concerns that the caffeine can mask a person's perception of intoxication, leading them to drink more than they typically would before passing out. Many of those who consume the drinks are college-age and underage drinkers.
The four companies decided to pull their beverages from stores or reformulate them to remove caffeine or other stimulants after the FDA's ruling. Under pressure from states' attorneys general, Anheuser-Busch and MillerCoors removed their Bud Extra, Tilt and Sparks drinks from the market two years ago.

The National Beer Wholesalers Association didn't issue specific guidance to distributors on how to dispose of the products, but spokeswoman Kathleen Joyce said the trade group has advised members to work promptly with state regulators to ensure the products were handled in compliance with the FDA directive and any state laws.
In Virginia, distributors have been buying back the canned drinks from retailers to get them off the market after the Virginia Beer Wholesalers Association sent a request for its members to stop selling the drinks to retailers and to buy back inventory from the stores, spokesman Jim Babb said.
In addition to accepting the drinks from wholesalers, MXI has a contract to take Phusion Projects' discontinued Four Loko beverages.
MXI distills the alcohol from the drinks, then sells the fuel to be blended into gasoline, Potter said. It sells the aluminum cans to a recycler. Potter estimated it takes "30 days until it's back on the shelf as another beer can." It also recycles the drinks' water, cardboard packaging and shipping pallets.
"These are actually things that could go directly into a landfill or incinerator or some other waste process that's not as environmentally friendly, so I think it's a good thing," he said.
In Virginia, distributors have been buying back the canned drinks from retailers to get them off the market after the Virginia Beer Wholesalers Association sent a request for its members to stop selling the drinks to retailers and to buy back inventory from the stores, spokesman Jim Babb said.

MXI distills the alcohol from the drinks, then sells the fuel to be blended into gasoline, Potter said. It sells the aluminum cans to a recycler. Potter estimated it takes "30 days until it's back on the shelf as another beer can." It also recycles the drinks' water, cardboard packaging and shipping pallets.
"These are actually things that could go directly into a landfill or incinerator or some other waste process that's not as environmentally friendly, so I think it's a good thing," he said.
